What to do with Canned Spinach??

 
So awhile ago I picked up a can of canned spinach on accident when I was buying green beans. I am at a total loss as to what to do with it! I usually buy spinach fresh or frozen. I'm just a bit scared to open this can and see what it really looks like. 
Anyone have any suggestions?

Menu Plan Monday 2/8

Wow. Can I just say that last week completely did not go as planned?? I guess it's good to have a plan even if it ends up being a guideline. 
The Pork Chops and Orzo were really tasty, but I did not grill them. At 5:30 I stuck my head outside and it was pouring down rain, and I immediately thought, "I am NOT grilling tonight!" Such is the Northwest weather. I cooked them in the skillet and then put the sauce over them and they were really yummy. 
On Tuesday night I was in bed in quite a bit of pain by the time my husband came home. He was glad that I had some Healthy Choice Frozen Dinners on hand. He and the kids ate those. I've had a terrible week with back spasms because of my pregnancy. I had just been to the doctor in the afternoon, but I was still in pain 7 hours later. 
The next night I discovered I was out of yeast, so no homemade pita pockets with Tuna. We ended up having grill cheese, soup and veggies....I think. It's hard to remember now. By 10 pm that night my back started to spasm again and I was literally up all night watching the clock, laying on my heating pad and waiting for the pain to subside. It finally did by 5 am. A good friend brought us dinner that night, how sweet of you Rebekah! 
The rest of the week (Friday-Sunday) my back pain has been more under control. Friday night I made Ham, Potatoes, Green Salad, Green Beans and Bread. Saturday I made BBQ Chicken, Baked Potates, and Green Salad. The Chicken didn't look good to me, so I had a baked potato and Salad for dinner. It's been quite a roller coaster here. All this explaining is just to say that I still believe in menu planning, but I fully believe in my right to alter it. Whether for reasons of not feeling good, or poor planning and running out of ingredients. The nice thing about having a stocked pantry and freezer is that you are never too far away from a different meal. And it's good to be prepared!

Mushroom Lasagna using 1/2 of the pork from Monday instead of Ground Beef (I'm out of ground beef and I haven't seen any decent sales on it this week)
Green Salad
Bread?

Leftovers

Friday:
Celebrating my husband's birthday with Pizza Hut (His request)

Saturday:
Celebrating my son's birthday-plans are up in the air, Chuck e Cheese? for Lunch
Dinner:
Beef Stir Fry using cabbage and whatever veggies I have on hand

Lunch at Church, Dinner to be determined

February Super Savings Saturday-Walgreens, Bartells and Fred Meyer



Well, it's the start of a new month. You can see how I did for the month of January HERE. Since I run my months from the 5th to the 5th, this post marks my first Super Savings Saturday for the month of February. I typically shop one week for the upcoming week. Here is how I did!

My plan is to post all of my purchases again for the month. I'll have to say though--my pregnant body is getting a bit weary from the extra work of sitting at the computer to post these along with the pictures. My kids help me out quite a bit and I've been telling them it's a part of a "game" mommy is playing. And really, it is. It's a game to see my savings! We'll see how long I last. I really wanted to make it WinCo and Albertsons this week as well, but it just didn't happen. From being tired and then locking myself out of the house--I ran out of time. My husband is not a big shopper but he's been asking me to allow him to help me more. I'm thinking of asking him to go to WinCo with me this weekend. I'd bet he would do it willingly even though it's not his favorite thing. If I go this weekend I'll include it with next week's post.

Super Savings Saturday-Did I make my goal of $240 this Month?

 Did I make it to my goal? Well....sort of.

Very Little Shopping this week:
The shopping I did this week was to make use of the Albertsons Double Coupons that came in Sunday's paper. While I was there at the store I found some deals that I just could not possibly pass up. At the end of last week I was very close to my goal of $240 and I was really motivated to save a bit of my grocery money this week. I spent just a little under $9 at Albertsons with two transactions for these items pictured. You can see the full detail of these transactions HERE.  When I see something like a package of 48 diapers for $1.99 I am just NOT going to pass that up!! :)

Even with this transaction I would have made my goal, but then I had forgotten that my hubby was out of Prilosec. He really needs to take it at least every other day and I needed to run out and get him some. And sometimes these things just happen. I forget! It's not like a gallon of milk and I don't have a regular time I purchase it. The last couple of times I've purchased it at Alice.com because it is a great price, but this week we couldn't wait for the shipping time. I will plan to be a bit more prepared in the future. I ran to Target and spent $9.69 for the Prilosec after my $3 coupon.


End of the month thoughts:
I have to wonder sometimes about the challenges I give myself. Although we did have some meat in the freezer to use up this month, my goal for $240 this month was a stretch to say the least! This month the 5th to the 5th was a total of 5 weeks instead of 4. So when  I challenged myself to save $20 of our budget it was a huge challenge!  I am proud of myself that even with the surpirses I did still stay under budget. Better than going over! :)

Next month I am planning on the goal of $240 again, but it will be a 4 week month instead of a 5 week month. We'll see how that goes!

More coupons for the Albertsons Deals this week!

I just noticed another website that has coupons for the sales this week at Albertsons. The website address was found on the back page of this week's ad with the other manufacturer coupons. These coupons are not as high value as I had hoped, but make sure and scan through them to see if you need any of them.
